Smoked Sprats

1 Can smoked sprats in oil

8 Hard Boiled Eggs

1 Cup Mayo ( I like to use Russian mayo for these sandwiches I will post a pic down below)

5-8 Garlic cloves

8 Slices Toasted Bread

8 baby tomatoes (optional)

you can also use sliced olives and dill as decor

  1. Fill a medium sauce pan with water and boil eggs for about 10 minutes . After that drain the water and pour in iced water to cool the eggs.

  2. Peel the eggs and grate them on a small hole side of the grater.

  3. Slice each piece of bread across into 2 triangles and then toast each triangle.

  4. Rub garlic cloves on each side of toasted bread , its important to toast the bread , that will expose the garlic and prevent the sandwiches to become soggy .

  5. Spread about a tsp on mayo on each toast .

  6. Add grated eggs to each toast just enough to cover the bread.

  7. Take each sprat and with a sharp knife split it open from the belly and remove the spine and scrape out the insides . Be really gentle and patient with this process it will be all worth it in the end.

  8. Garnish with half of the baby tomato and cilantro leaves or you can use sliced olives and dill.
