Italian Meringue Wafer Rolls
On this picture I doubled the recipe.
Wafers:
1 tsp vanilla
5 eggs
2 sticks butter
1 1/3 cup sugar
2 cups flour
In a mixing bowl combine sugar,eggs and vanilla extract .
In the microwave melt the butter.
Makesure the butter is not hot .
Add butter to the batter.
Add sifted flour.
Mix just until well incorporated .
In a waffer iron add one tbsp of butter at a time .
Cook for few minutes on each side .
Soon as the waffer is cooked immediately roll into a roll.
Repeat with all of the batter.
Fill each roll with Italian Meringue about 1 tbsp from each side . You can use a piping bad or a ziplock bad.
Italian Meringue:
1 cup sugar
3 egg whites
1/2 tsp lemon juice
2.5 fl oz water
pinch of salt
To make Italian meringue we will be beating egg whites and cooking the syrup at the same time.
In a sauce pan combine sugar and water and give it a stir.
On a medium low heat cook it until it reaches 230*
Meanwhile in a bowl of the mixer beat the egg whites with pinch of salt.
Start beating the egg whites on a low speed and as soon as the syrup starts to boil crank it up to the highest speed.
Once the syrup came to a boil avoid stirring it as that will caramelize the sugar and we don’t need that.
When the syrup has reached 230* VERY SLOWLY start pouring it into the egg whites with mixer on the highest speed.
Add lemon juice .
Continue beating until the mixer bowl is room temperature.
Use piping bag with an open star tip.
