Italian Meringue Wafer Rolls

On this picture I doubled the recipe.

Wafers:

1 tsp vanilla

5 eggs

2 sticks butter

1 1/3 cup sugar

2 cups flour

  1. In a mixing bowl combine sugar,eggs and vanilla extract .

  2. In the microwave melt the butter.

  3. Makesure the butter is not hot .

  4. Add butter to the batter.

  5. Add sifted flour.

  6. Mix just until well incorporated .

  7. In a waffer iron add one tbsp of butter at a time .

  8. Cook for few minutes on each side .

  9. Soon as the waffer is cooked immediately roll into a roll.

  10. Repeat with all of the batter.

  11. Fill each roll with Italian Meringue about 1 tbsp from each side . You can use a piping bad or a ziplock bad.

Italian Meringue:

1 cup sugar

3 egg whites

1/2 tsp lemon juice

2.5 fl oz water

pinch of salt

  1. To make Italian meringue we will be beating egg whites and cooking the syrup at the same time.

  2. In a sauce pan combine sugar and water and give it a stir.

  3. On a medium low heat cook it until it reaches 230*

  4. Meanwhile in a bowl of the mixer beat the egg whites with pinch of salt.

  5. Start beating the egg whites on a low speed and as soon as the syrup starts to boil crank it up to the highest speed.

  6. Once the syrup came to a boil avoid stirring it as that will caramelize the sugar and we don’t need that.

  7. When the syrup has reached 230* VERY SLOWLY start pouring it into the egg whites with mixer on the highest speed.

  8. Add lemon juice .

  9. Continue beating until the mixer bowl is room temperature.

  10. Use piping bag with an open star tip.
