Oatmeal Shortbread Cookies
2 Eggs
2 sticks Butter (8oz room temp)
1 1/2 cups Oatmeal
1 1/2 cups Sugar
1 tsp Salt
1 Tbsp baking powder
2 1/2 cups flour
On a blender , roughly blend the oatmeal .
In a mixing bowl add butter and sugar and beat it until it turns lighter in color.
Begin adding eggs one by one.
After eggs are fully incorporated start adding oatmeal.
At this step you won’t need to use the mixer anymore , add the flour and mix until well combined.
Preheat the oven to 420 * and line the baking sheet with parchment paper.
Roll the dough into a medium size balls. Use water to prevent dough from sticking to hands.
I divided my dough into 12 even balls , my cookies came out huge, if you like large cookies then divide in 12 but if you want smaller you can easily divide into 15-18.
Bake for about 20 minutes for large cookies and about 10-15 for smaller cookies.
