Rugelach

3 eggs yolks
2 tsp vanilla extract
7 oz cold butter
1 cup sour cream
1/2 tsp salt
1 tsp baking soda
2/3 cup sugar
4 cups flour 
Confectioners sugar 
Filling: Jam
☆ sift all of the dry ingredients
☆ roll stick of butter in flour and grate it on a large hole grater, mix with flour 
☆ add salt, sugar, eggs yolks and sour cream
☆ knead dough until all evenly combined
☆ cover in plastic wrap and let it rest in the fridge for 30 min 
☆ divide dough into 4 even parts
☆ preheat your oven to 400° and line your baking sheet with parchment paper 
☆ roll dough into a large circle and slice it with pizza cutter just like you would slice pizza in about 6-8 pieces 
☆ on the largest side of each triangle place small amount of jam . Best to use ticker and not runny jam for this recipe .
☆ fold two corners together covering the jam creating a triangle pocket and then roll
☆bake at 400° for about 10 min 
☆ coat every cookie in confectioners sugar
