Watermelon Feta
5 cups Watermelon (cubed)
4 oz Feta Cheese Crumbles
1 English Cucumber
1/2 Cup Sliced Almonds
1 tbsp Olive Oil
2-3 tbsp Mint Leaves ( chopped) (Adjust to taste)
2-3 tbsp Basil (chopped ) (Adjust to taste)
Balsamic Vinegar ( to taste)
Cut watermelon into cubes.
Cut cucumber into quarter slices.
Chop Mint and Basil.
Into a mixing bowl add cubed watermelon, cucumber slices, chopped herbs, sliced almonds, feta crumbles and olive oil.
Mix until olive oil is evenly distributed.
Before serving, drizzle Balsamic Vinegar . ( To taste)
Garnish with mint leaves .( Optional)
