Kufta ( Tomato Meat Ball Soup)
1 gal Water (16 cups)
1 lb ground pork
1 egg
1 medium onion ( chopped)
1 carrot (shredded)
1/2 cup jasmine rice ( for meatballs)
1/4 cup jasmine rice ( for soup)
salt
pepper
2 bay leaves
1/8 cup tomato paste
1 lb potatoes (cubed)
1/8 cup vegetable oil
pressed garlic to taste
On a high heat bring water to a boil.
Add bay leaves , salt and pepper.
To the ground pork add an egg, and half a cup of rice , season with salt and pepper.
Give it a good mix , until everything is evenly combined.
To prevent your hands from sticking while rolling the meat balls , dip your hands into cold water.
Create about 14 medium meat balls .
Throw all of the meat balls into a boiling water for about 20 minutes.
Once the meatballs are fully cooked take them out of the water.
Now add potatoes and rice .
On a frying pan add vegetable oil and saute onions , carrots and tomato paste.
Add the mixture into the soup.
Cook until potatoes are easy to pierce with a knife and rice is soft .
Add meatballs directly into each bowl and not into the pot with soup.
Serve with freshly pressed garlic .
