Mediterranean Spicy Shakshuka
Olive Oil
2 small bell peppers (chopped)
1 small onion (chopped)
3-4 garlic cloves (minced)
2 medium tomatoes (diced)
2 tbsp tomatoes paste
1 tsp paprika
1 tsp cumin
1 tsp sugar
red pepper flakes (to taste)
salt
pepper
5 eggs
On a medium high heat add olive oil to the frying pan and sautée the peppers and onions until nice and soft.
Add garlic, tomato paste, diced tomatoes and spices and cook for about 10 minutes with closed lid.
Once all the veggies are nice and soft, with a spatula move the veggies around to make 5 spaces for the eggs.
Crack the eggs in , season with salt and pepper and close the lid, cook until desired doneness .
Serve with pita bread .
You can also garnish with chopped herbs.
