Beef Pirozhki
Dough:
2 tsp dry instant yeast (7g)
1 1/2 cup milk
2 egg yolks
2 oz butter
2 tsp sugar
2 tsp salt
3 1/2 cups flour
Filling;
1 1/2 lbs ground beef
1 medium onion (chopped)
salt
pepper
1 1/2 tbsp paprika
olive oil
Warm up the milk , careful not to make it hot . Milk should be a little warmer than room temperature.
In a small bowl combine yeast , 1 tsp sugar and about 4 tbsp of warm milk and give it a stir.
In a separate bowl beat egg yolks with 1 tsp sugar, salt and melted butter.
Add the rest of the milk .
Now combine yeast and egg mixture together .
Start adding flour in portions.
Knead it for few minutes until it doesn’t stick to hands .
Slightly grease the bowl and set the dough to rise.
Cover with plastic wrap and leave it in a warm spot to rise.
Dough should at least double in size.
Filling:
In a frying pan add few tbsps olive oil and sauté chopped onions.
Add paprika and pinch of salt.
Once onions have softened add ground beef.
Season with salt and pepper to taste.
Cook until meat is fully cooked.
Leave it to cool down.
1 Egg yolk to brush on top
Preheat the oven on 350* and line the baking sheet with parchment paper .
Now that the dough has risen, stretch it lengthwise and divide into about 12 equal pieces.
Roll each piece into a circle.
Generously add the filling and pinch together on top and then pinch on each side into a triangle.
In a bowl slightly beat an egg yolk and brush each Pirozhok on top.
Bake for about 25-30 minutes or until golden brown.
