Turkey Meatball and Rice Soup
1lb ground turkey
1lb potatoes (quartered and sliced)
1 egg
Salt
Pepper
1-2 bay leaves
1/2 cup rice (washed)
1/2 medium onion (chopped)
1 carrot (shredded)
1 tsp vegetable oil
10 cups homemade broth
*In a bowl mix ground Turkey with an egg and season with salt and pepper.
* Into a pot pour in the broth add bay leaves , salt and pepper.
*Bring it to a boil
*Roll mini meatballs and drop each directly into boiling broth.
*Cook for about 5 min.
*Lower the heat to a medium high.
*Add potatoes and rice .
* Onto a pan add vegetable oil and sautee onions and carrots.
*Add onions and carrots into the soup and cook until potatoes and rice are fully cooked.
