Zuppa Toscana
Super easy recipe and so so good!
2tbsp chicken bouillon powder
1 small onion (chopped)
2 cloves garlic (pressed)
1/2 red chilli pepper (finely chopped)
6 strips bacon (chopped)
1 lb mild Italian sausage
1 lb baby potatoes (washed & sliced in half circles )
1 bunch kale
2 cups heavy cream
10 cups water
☆ In the pot fry bacon until crispy and remove from the pot .
☆In the same pot sautee onions, garlic and chilli pepper, also remove from the pan .
☆ Cook Italian sausage all the way through and remove it from the pan.
☆To the same pot add water, bouillon powder and bring it to a boil.
☆Add potatoes, Italian sausage, onions,pepper,garlic ,bacon and cook until potatoes are nice and soft for about 20-25 min.
☆Add heavy cream and boil for about 5 min.
☆Turn the stove off and add roughly chopped kale .
Optional: sprinkle shredded parmesan into a bowl
•If you dont like spicy or have kids skip the chili pepper . You can add red pepper flakes directly into your bowl.
