Chocolate Crinkle Cookies
2 eggs
1/2 stick of butter (2oz)
1 1/3 cup flour
2 cups confectioners sugar
1/2 cup coco powder
2tsp baking powder
pinch salt
1/2 cup of additional confectioners sugar to coat the cookies
Combine all of the dry ingredients .
Beat the eggs until yolks and whites are well combined.
Add the eggs to the dry ingredients .
Add room temperature butter.
Mix all of the ingredients until well combined.
Cover with plastic wrap and set it in the fridge for about 30 min.
I used measuring table spoon to scoop the cookie dough to make them all about the same size.
Roll into a ball.
Roll each ball in confectioners sugar , make sure it has a generous coating .
Place on a baking sheet lined with parchment paper.
Bake for about 12 minutes at 375*
Carefully transfer the cookies onto a cooling rack , cookies will be very soft at this point but once they are cooled off will have a perfect texture.
