Creamy Garlic Spinach Spaghetti Squash

1 spaghetti squash

1/2 cup heavy cream

1 tbsp cream cheese

5 garlic cloves

5 oz chopped spinach

1/2 grated parmesan

salt

pepper

olive oil

  1. Pierce spaghetti squash with a fork all around.

  2. Microwave for about 3-5 minutes.

  3. Cut it in half and scoop out the seeds.

  4. Brush some olive oil onto each side of the squash.

  5. Season with salt and pepper.

  6. Roast at 350* for about 30 min.

  7. Let it cool.

  8. In a frying pan add pressed garlic and oil.

  9. Cook for a few minuted until garlic is fragrant .

  10. Add spinach, cream cheese and heavy cream.

  11. Cook until spinach is nice and soft and add parmesan .

  12. Season with salt and pepper.

  13. Once the squash has cooled with a fork separate the strands .

  14. Mix together with sauce and put in the oven for another 30 minutes.
