Creamy Garlic Spinach Spaghetti Squash
1 spaghetti squash
1/2 cup heavy cream
1 tbsp cream cheese
5 garlic cloves
5 oz chopped spinach
1/2 grated parmesan
salt
pepper
olive oil
Pierce spaghetti squash with a fork all around.
Microwave for about 3-5 minutes.
Cut it in half and scoop out the seeds.
Brush some olive oil onto each side of the squash.
Season with salt and pepper.
Roast at 350* for about 30 min.
Let it cool.
In a frying pan add pressed garlic and oil.
Cook for a few minuted until garlic is fragrant .
Add spinach, cream cheese and heavy cream.
Cook until spinach is nice and soft and add parmesan .
Season with salt and pepper.
Once the squash has cooled with a fork separate the strands .
Mix together with sauce and put in the oven for another 30 minutes.
